Body Transformation Breakfast: Oat Porridge with Dates and Oranges
- 2/3 cup uncooked oats, rolled or steel cut
- 2 cups water
- 1 1/2 cup cups orange juice
- 4 large dates, pitted and chopped
- 1 cinnamon stick
- 1/2 teaspoon green cardamom pods
- Pinch of sea salt
- 1 cup orange segments, drained
Toast oats in a large skillet over medium heat, stirring constantly, until fragrant and just golden brown. Add water, orange juice, dates, cinnamon, cardamom and salt and bring to boil over medium high heat. Reduce heat to medium low, cover and simmer, stirring occasionally, until liquid is absorbed and millet is tender. Remove and discard cinnamon and cardamom then stir in oranges, spoon into bowls and serve.
Body Transformation Smoothie: Triple Chocolate Rush
- 2 scoops chocolate protein powder
- 6 oz unsweetened almond milk
- 1.5 TBSP raw peanut butter
- 1 TBSP raw cocoa powder
- 1 TBSP cacao nibs (optional)
- 4 oz water
- Crushed ice
Body Transformation Lunch: Simple Tuna Vegetable Salad
- 8 ribs celery from the heart with leafy tops, chopped
- 6 tomatoes, chopped
- 1 (15-ounce) can organic chick peas, drained and rinsed
- 1 red onion, chopped
- A handful flat-leaf parsley, coarsely chopped
- 1/2 cup pitted black olives, rinsed and coarsely chopped
- 2 -6-ounce cans tuna in water, drained and rinsed
- Juice of 2 lemons
- 1/3 cup extra virgin olive oil
- Sea salt and freshly ground black pepper
Combine celery, tomatoes, chick peas, onions, parsley and olives. Flake tuna and add to the salad. Dress salad with juice of 2 lemons and about 1/3 cup olive oil. Season the salad with salt and pepper and toss.
Body Transformation Dinner: Steak with Salsa Verde
- 1/2 cup flat-leaf parsley leaves
- 1/2 cup basil leaves
- 2 cloves garlic
- 1 anchovy/pilchard fillet, cut into pieces
- 1 cup extra virgin olive oil
- 2 tablespoons fresh lime juice
- Sea salt, to taste
- Freshly ground pepper, to taste
- 1 1/2 pound sirloin steak
Purée parsley, basil, garlic and anchovy fillet. Slowly add olive oil, until completely combined. Add lime juice and pepper. Process until blended and the sauce is smooth. Taste for seasoning and adjust as desired. Set sauce aside.
Season the steak with sea salt and pepper. You can then grill, broil or pan fry to to your liking. Slice it thinly and drizzle with salsa verde. Serve with broccoli or another great veg!
The bottom line is this. Your body transformation is built from the inside out with nutrition!
